We keep the tap list tighter than a pure taproom — the food is the lead here. Every pour below is brewed on-site to sit comfortably next to what the kitchen is sending out.

Brewery tours
See where the beer is made.
On weekends, our brewmaster walks small groups through the brewhouse — the mash tun, the kettle, the fermenters, and the cellar — and explains how each house beer is built to pair with the kitchen. Tours run about 35 minutes and end with a tasting flight for guests 21 and over.

The kitchen and the brewhouse are run by two people who taste together every week. That is the whole idea — the food and the beer are built side by side, not in separate rooms.

I cook the way I like to eat — generous, a little rustic, and built around whatever is good that week. At Coppersmith I get to do something most kitchens cannot: taste a dish next to the exact beer it will be served with and adjust both until they fit. The menu changes when the market and the brewhouse change. Nothing leaves the pass unless it makes the beer taste better, and nothing goes on tap that the kitchen cannot stand behind.

I brew for the table, not the trophy case. That means a tight house lineup — a clean pilsner, a balanced amber, an honest West Coast IPA — rather than a wall of one-offs. I sit in on menu tastings every week so the beer is designed to pair, not just to pour. If a dish needs a maltier amber or a drier pilsner, I will rework the recipe before the next batch. The food is the lead here, and the beer is happy to play alongside it.

You'll find us on Kettner Boulevard in San Diego, a short walk from the waterfront. The bar fills up on weekend evenings — reserve ahead if you can, but there's always a seat at the bar for walk-ins.
